HMP Dovegate is a category B male establishment prison and our current population is over 1100 prisoners all over the age of 21. All the convicted inmates at Dovegate are serving a range of sentences over 4 years to life, we also have those awaiting sentence or those on trial.

The Job Opportunity:

As a Chef Security Officer, you will be responsible for training and supporting offenders during the preparation and service of food to the whole of the prison community at key mealtimes throughout the day; whilst ensuring that the highest possible standards of cleanliness and hygiene are maintained. An integral part of the role will require ensuring all areas of the catering and security operation are always maintained.

We are looking for someone with experience working within a catering environment and some level of supervisory experience. Delivering more than 1200 meals per day and in line with prison regime, the ability to remain calm under pressure whilst delivering direction is essential as you will be working in what can be a challenging and complex environment.

This is a varied and hugely rewarding role, where you will be able to act as a role model to the offenders and teach them skills that they will be able to use in the outside world once they have served their sentence.

Daily Duties Involved:
  • Assist the Catering Manager and Chef Supervisor in the delivery of catering services to the whole establishment and complies with all relevant Health & Safety and Food Safety Regulations, legislation and guidelines.
  • Provide varied and healthy menus for prisoners to include special diets, special events and religious events. Keeping abreast of trends and developments in the catering industry such as menus, consumer tastes.
  • Ensure the security and food safety of all foodstuffs is maintained during delivery, storage and distribution within the kitchen area.
  • Record and document all relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP and Company Policies
  • Provide training and supervision to kitchen workers
  • Perform random Quality Checks on serveries' before, during and after mealtimes.
  • Reacting to complaint issues and trends, with a cohesive approach along with the catering team.
  • Work shift work and weekends when operationally required.
  • Assist in prisoner movements and searches to and from the kitchen.
  • Train for and carry out any other work reasonably acceptable within the capabilities of the post holder.

What we are looking for in our candidates:
  • A strong commitment to the rehabilitation of prisoners.
  • Basic computer skills including knowledge of Excel, Word and Outlook applications.
  • Good supervisory skills with strong interpersonal skills, including good oral and written communication.
  • Able to demonstrate resilience with a basic understanding of both conflict resolution and de-escalation and risk and conflict management
  • Commitment to working effectively in a socially diverse environment, with a good team ethic.
  • Excellent time management
  • Assertive, creative and progressive along with good problem-solving skills.

Essential:
  • Literacy and Numeracy Level 2 or equivalent GCSE.
  • City & Guilds 706/1 & 2 or equivalent NVQ or similar in Food preparation and Production
  • Food Safety level 3
  • Awareness of Hazard Analysis and Critical Control Point (HACCP)
  • Awareness of Allergen Control within Catering
